Chef Raymond’s Cauliflower Mash

Ingredients:


1 Head Cauliflower , 1 1/2 to 2lbs.

4 Cloves Garlic

1/4 Cup Olive Oil

3/4 Cup Grated Parmesan

Salt, To Taste

White Pepper, To Taste



Method:


Remove the leaves and bottoms of the stem from the cauliflower.  Score the

cauliflower all the way to the center 5 or 6 times.  Steam the cauliflower until completely

soft (about 15-20 minutes).  Cool the cauliflower without covering it in a refrigerator,

across from a fan (this helps dry it out).  Submerge the garlic in the olive oil and cook over

a low flame, until cooked through and slightly browned


When the cauliflower is completely smooth.  Add parmesan, salt. and pepper , to taste and

run food processor until completely mixed.


Place in an oiled dish and bake at 350 until hot through and slightly browned (about 20

minutes).  Serve as a side dish.
