Fritzie’s Spinach Balls
(Low carb version)
Ingredients:
•2 10 oz packages of frozen spinach, cooked and drained
•3 eggs, beaten well
•1 Cup of crushed Wasa Crackers, about 15 crackers
•1 Cup of almond meal
•1 small onion, diced
•¾ Cup of Butter (softened)
•½ Cup of Parmesan Cheese
•½ tsp salt
•½ tsp garlic salt
•1TBS Italian Seasoning
Method:
Mix well by hand, chill spinach batter for an hour in the refrigerator. Preheat oven to 350. Make balls about the size of a walnut and place on a baking sheet about an inch apart. Bake for 15 minutes.
The way Auntie Fritzie does it:
Instead of Almond Meal and Wasa Crackers she uses 2Cups of crushed stuffing mix. Also she uses ½ tsp of Thyme rather than 1TBS Italian Seasonings.
The changes that I made to this recipe had to do with wanting to lower the carb count and the simple fact that I had no Thyme when I made it; but I knew that there was Thyme in my Italian Seasonings and I knew that a “stuffing mix” would also have herbs in it that are in my Italian Seasonings. In any case the result was delicious and I keep getting requests for the recipe!
