Garlic Lemon Green Beans with Almonds

Ingredients:


  1. 1 lb of green beans

  2. 3 Medium cloves of garlic

  3. 1/3 Cup sliced or chopped almonds

  4. 2 TBSP Olive Oil

  5. 1 tsp lemon juice

  6. ¼ Cup Low Sodium chicken broth

  7. Sea Salt and Black Pepper to taste

Method:


•Clean your beans and add to a medium pot of lightly salted water.  Bring beans to a boil then turn the heat off and cover for 5 to 7 minutes. Then drain beans in a strainer.

•Heat olive oil in a large pan over medium high heat, add almonds and toss for about a minute, add minced or pressed garlic, cooking until lightly browned.   Now add your beans, broth and lemon juice.  Turn heat to low and cook covered for about 5 minutes.

•Add salt and pepper to taste!
