Ingredients:


  1. 1 TBSP Olive Oil

  2. 1 small onion, chopped

  3. 3 medium cloves of garlic, peeled and minced

  4. 6 oz can of HOT Rotel

  5. ½ Cup of dry red wine

  6. ½ Cup of low sodium chicken broth

  7. 1 TBSP of your favorite hot sauce

  8. 2 TBSP Italian Herb Seasonings

  9. 1 Pinch of Sea Salt

  10. 3 TBSP Almond Meal/Flour

  11. 1 lb Ground Turkey

  12. 1 egg, lightly beaten

  13. 2 egg whites, lightly beaten

  14. ½ Cup zucchinni, peeled and grated

  15. ½ Cup of Parmesan Cheese

  16. A few shakes or grinds of Black Pepper

  17. Baking paper, BUTTER, or nonstick cooking spray to grease your LOAF PAN. 

Method:

Preheat oven to 350

•Saute onion and garlic with olive oil until just golden brown.  Stir in 1 TBSP of almond meal.  Add wine, chicken broth, hot sauce, Rotel, Italian seasonings and salt to pan.  Bring to a boil.  Reduce Heat to low and simmer uncovered for 15 minutes.

•Combine ground turkey, eggs & egg whites, zucchini and 2 TBSP almond meal, and Parmesan cheese in a large bowl.  Mix well.  Add ½ Cup of the sauce to the turkey mixture and stir in gently; reserve the rest for later.  Grease your 4x8 loaf pan. Pat the turkey into the pan.  Bake for 60 to 70 minutes.

•Heat remaining sauce and serve with meatloaf


If SPICY isn’t your thing, you can reduce the amount of hot sauce to 1 tsp or forgo it altogether.  Also instead of using HOT Rotel, you can use mild or your favorite tomato sauce in its place.  The result will still be delicious!
